include a recipe
from Lava Cap's
website this
month. It's a
great summer
grilling idea.
GRILLED SAUSAGE
ON SKEWERS
MARINATED, WITH
VEGETABLES
SERVE
WITH LAVA CAP’S
“STROMBERG” CABERNET
SAUVIGNON
Sausage is generally
some marriage of
ground meats
that don’t otherwise
figure in
entree-style
cooking. It is
emblematic of
down-to-earth
efficiency and
frugality like few
other preparations.
Once you know how to
make sausage, you
wonder why it ever
seemed so involved,
but until you do
it’s a good thing
that some excellent
prepared sausages
are readily
available in the
market. Sausage
lends itself
naturally to
grilling and kebobs.
Don’t yuppify
grilled sausage, and
accept this
invitation to
reconsider the uses
of Cabernet
Sauvignon, the
epitome of "label"
wine, which is
chosen not only for
its grill-hearty
presence but to show
off this grape’s
rustic heritage.
Generally allow one
skewer of sausage of
vegetables to a
person. This recipe
serves four.
INGREDIENTS
4 medium sausages,
sliced diagonally to
facilitate grilling
and enhance
presentation
For the
marinade
1/2
cup olive oil
1/2 cup Cabernet
Sauvignon
1 bay leaf
1 clove garlic,
minced
1 small onion,
minced
1 bay leaf
1 teaspoon
peppercorns
For the
skewers
In addition to the
sausages, squares or
skewer-sized pieces
of bell pepper,
zucchini, red onion,
mushrooms, and other
grill-happy
vegetables
METHOD
Assemble the
marinade and the
skewers. Marinate
the skewers for at
least half an hour.
Grill the skewers
and wait for the
sausage to glisten
and the vegetables
to blacken at the
edges. That’s about
it — don’t make it
too complicated.
Suggested
accompaniment:
boiled, grilled
potatoes, and a
glass of
Lava Cap
“Stromberg” Cabernet
Sauvignon.
