Did you know.....
the indentation on the
bottom of your wine
bottle was there for a
reason?
This large, thick-walled
and tall-necked bottle
has evolved into the
ideal shape for storing
sparkling wine under
tremendous gas pressure.

All
Champagne
and other sparkling wine
bottles have a recess or
indentation in the
bottom of the bottle.
For wine stored under
tremendous gas pressure,
this is essential
because it relieves the
pressure on the bottom
of the bottle. Without
the punt (or kick, as it
is also called) the
bottle might well blow
out at the bottom.
For still wines, the
punt in the bottle
has been there since
glass was first
blown by hand. A
pontil, or wooden
stick, was used to
secure the bottom of
the bottle while the
glass blower spun
and blew at the neck
end. Naturally, the
stick indented the
bottom of the still
molten glass. Today,
molded glass bottles
do not require the
punt, but tradition
decrees that it
shall be there. You
will not find it
universally, but
almost all fine wine
bottles retain the
punt.

Baked Salmon Fillets
Dijon
Serve White Rock Napa
Chardonnay for a winning
accompaniment
INGREDIENTS
-
4 (4 ounce) fillets
salmon
-
3 tablespoons
prepared Dijon-style
mustard
-
salt and pepper to
taste
-
1/4 cup
Italian-style dry
bread crumbs
-
1/4 cup butter,
melted
DIRECTIONS
-
Preheat oven to 400
degrees F (200
degrees C). Line a
shallow baking pan
with aluminum foil.
-
Place salmon
skin-side down on
foil. Spread a thin
layer of mustard on
the top of each
fillet, and season
with salt and
pepper. Top with
bread crumbs, then
drizzle with melted
butter.
-
Bake in a preheated
oven for 15 minutes,
or until salmon
flakes easily with a
fork.
